1. 4 large bell peppers (any color)
2. 1 cup cooked quinoa
3. 1 can (15 oz) black beans, rinsed and drained
4. 1 cup diced tomatoes
5. 1/2 cup diced red onion
6. 1/2 cup diced green bell pepper
7. 1/2 cup corn kernels (fresh or frozen)
8. 1/2 cup shredded cheddar cheese (optional)
9. 1 tablespoon olive oil
10. 2 cloves garlic, minced
11. 1 teaspoon ground cumin
12. 1/2 teaspoon chili powder
13. 1/4 teaspoon cayenne pepper (adjust to taste)
14. Salt and pepper, to taste
15. Fresh cilantro, for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C). Slice off the tops of the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened and fragrant.
  3. Add the diced tomatoes, green bell pepper, corn kernels, cooked quinoa, black beans, cumin, chili powder, cayenne pepper, salt, and pepper. Stir to combine and cook for another 5 minutes, allowing the flavors to meld together.
  4. Stuff each bell pepper with the black bean and quinoa mixture, pressing it down gently. Top with shredded cheddar cheese, if desired.
  5. Cover the baking dish with aluminum foil and bake for 30-35 minutes or until the bell peppers are tender.
  6. Remove the foil and bake for an additional 5 minutes or until the cheese is melted and bubbly.
  7. Garnish with fresh cilantro and serve hot.
