1. Chinese Eggplant, sliced

3. Indian Bitter Melon, deseeded and sliced
4. Thai Eggplant, halved

7. Garlic, minced
8. Firm Tofu, cubed
9. Soy Sauce
10. Sesame Oil
11. Rice Vinegar
12. Brown Sugar
13. Fresh Basil Leaves
14. Green Long Beans, trimmed and halved
15. Cooked Rice, for serving

Instructions:

  1. In a small bowl, whisk together 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of brown sugar, and 1 teaspoon of sesame oil. Set aside.
  2. Heat some oil in a large pan or wok over medium-high heat. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
  3. Add the sliced Chinese eggplant, Chinese long squash, Indian bitter melon, Thai eggplant, red bell pepper, and green long beans to the pan. Stir-fry for 5-7 minutes until the vegetables are slightly tender.
  4. Push the vegetables to one side of the pan and add the cubed tofu to the empty space. Cook for a few minutes until the tofu is heated through.
  5. Pour the prepared sauce over the vegetables and tofu. Toss everything together to coat evenly. Cook for an additional 2-3 minutes until the sauce has thickened slightly.
  6. Remove from heat and garnish with fresh basil leaves.
  7. Serve the stir-fried vegetables and tofu over a bed of cooked rice.
