PRODUCT LIST

1. 4 large whole wheat tortillas or wraps
2. 1 cup hummus (flavor of your choice)
3. 2 cups mixed salad greens
4. 1 cup shredded carrots
5. 1 cup sliced cucumbers
6. 1/2 cup sliced cherry tomatoes
7. 1/4 cup sliced red onions
8. 1/4 cup chopped fresh herbs (such as cilantro or basil)
9. 1/4 cup diced Indian okra
10. 1/4 cup diced Chinese long squash
11. 1/4 cup diced chayote
12. Salt and pepper to taste

Instructions:

  1. Lay out the whole wheat tortillas or wraps on a clean surface.
  2. Spread about 1/4 cup of hummus evenly over each tortilla, leaving a small border around the edges.
  3. Layer the mixed salad greens, shredded carrots, sliced cucumbers, cherry tomatoes, red onions, diced Indian okra, diced Chinese long squash, and diced chayote over the hummus.
  4. Sprinkle the chopped fresh herbs, salt, and pepper over the veggies.
  5. Roll up the tortillas tightly, tucking in the sides as you go.
  6. Slice the wraps in half diagonally and secure with toothpicks, if desired.
  7. Pack the wraps in meal prep containers or wrap them in foil or plastic wrap for easy transport.
  8. These wraps can be stored in the refrigerator for up to 3 days. Enjoy them as a quick and healthy meal on the go!
